The Syrah comes from the El Romeral vineyard in Colmenar and the Romé from the Loguirre vineyard in Santo Pitar. Both vineyards of more than 800 m of altitude facing North and with soils mainly of schist and black phyllites.
Syrah: Mediterranean variety of Persian origin. Very well adapted to hot and dry climates, where it produces wines of intense color, fruity and with good structure.
Romé: The only autochthonous red variety of Málaga, of which there are very few hectares and with most of them found in the Axarquía. A chameleonic grape where on the same vine we can find uncolored bunches along with partial and full veraison ones.
The harvest is done by hand and the grapes are collected in small boxes. As a peculiarity of the Axarquia, each bunch is checked in the vineyard and then carefully placed in the box with the stems facing up. When looking for a fresh red, the Romé is used, which is cut in the first pass of the vineyard. While the Syrah is harvested with a good maturation.
Each of the varieties is fermented separately and spontaneously in small steel tanks. Once the fermentation is complete it is blended and aged for 6 months in 600 L French oak barrels.
