The grapes for this wine come from two vineyards, one in the Navarrete area and the other in Loma de Villanueva (pagos de en medio). In a sea of Moscatel vineyards we find these small plots of Garnacha, both facing North with schist and black phyllite soils.
Garnacha: One of the grapes with the greatest potential in our country, very well adapted to the Mediterranean climate and with good roots in the stony soils of the Axarquía. Obtaining elegant, sharp and fresh wines that are a true reflection of the terroir where they are born.
The harvest is done by hand using small boxes, with mules taking them out of the vineyards by steep narrow paths. A peculiarity of the Axarquía, each bunch is reviewed in the vineyard and placed in the box in an orderly manner with the stems facing up. The Garnacha is harvested at the end of August when the grapes have matured but are still firm and fresh.
Spontaneous fermentation in stainless steel tanks. The malolactic fermentation and aging for 10 months is carried out in old 1000 L concrete vats. Juan's grandfather made his first wines in these vats during the first half of the 20th century.
