Viticulture
The grapes for Filitas y Lutitas come from two vineyards of Muscat and one of Pedro Ximén. Muscat: Viña de Bernardo in Loma de los Jacintos and Viña de Pitón in Cerro de las Cucarras. Overlooking the sea, both vineyards are more than 50 years old, with black phyllites soils.

Pedro Ximén: Viña de Loguirre in Santo Pitar close to 1.000 m in altitude and with black phyllites soil.

Varieties

Muscat of Alexandria: The queen of the Axarquía, also known as Muscat of Málaga. Considered one of the oldest castes that remain genetically unmodified. It stands out for its great aromatic and freshness potential.

Pedro Ximén: In other areas called Pedro Ximénez. Of Andalusian origin, it has its ideal habitat in hot, dry climates, giving wines of great body and good aging capacity.

Harvest

The harvest is carried out by hand using small boxes that are loaded onto the mules which carry them up the steep slopes of the vineyards. As a peculiarity of Axarquía, each bunch is checked in the vineyard and placed in the box with the stems facing up. For this wine, Muscat is harvested slightly golden and well ripened, and the Pedro Ximén when it is fresher and has good acidity.

Winemaking

Maceration with one day skins and spontaneously fermented. The Muscat in a 3.300 L foudre over 100 years old and the Pedro Ximén in a 640L cask. Once the fermentation is completed, the two wines are blended and aged for 10 months in the foudre over lees.
