Noctiluca comes from Viña de Reyes in Lo Torres, one of the first vineyards to be replanted in the area after phylloxera. The beauty of the landscape, the vineyard of more than 130 years old, and the unique red phyllites soil make it a singular estate.
Muscat of Alexandría: The queen of the Axarquía, also known as Muscat of Málaga. Considered one of the oldest surviving castes that remain genetically unmodified, it stands out for its great aromatic and freshness potential, which together with the size of its berry make it an ideal variety for making sweet wines.
The harvest is done by hand using small boxes that are loaded onto the mules which carry them up the steep slopes of the vineyards. As a peculiarity of Axarquía, each bunch is checked in the vineyard and placed in the box with the stems facing up, which facilitates in the sunning of the grapes later.
The sunning of the grapes enhances the concentration of the sweet wines in the Axarquía. Each one of the bunches is laid out manually according to size in the pasero or awning without breaking the skins, and they are turned over after a few days. This allows us to gradually collect the bunches as they reach the desired amount of dehydration.
Once in the winery the sunned grapes are pressed and the must obtained is spontaneously fermented in a small steel tank. When the wine reaches the desired alcohol and sugar, fermentation is stopped by cooling (below zero) and it is kept in stainless steel for a few months at a very low temperature.
